I love this. It makes me want to move to Red Deer THAT MUCH MORE. Maybe just living closer to you, I can absorb some of your wisdom. Not to mention just all out hang out with you guys and visit. ;)

I've always wanted to go hunting for the same reason, except the only person I've ever told was Chris. It just seems like something we should all do sometime. It's what we've done for generations, why not experience it at least one time?

Maybe, someday.

Nice one. You'll get as many opinions about how to do it as the number of people you ask - here's my $0.02. Err on the side of low-temp, especially as it gets to temperature, and I'm also a believer in not taking it to the crackling stage - the fat has to get too hot to get there. I'll take a little less extraction and a cleaner flavor.

Also. Two words: meat pie. Yum.

Thanks for posting the kill floor vid and all the kind words,
Kevin

I'm all with you. About your kids' reaction, expect that they will be bothered if they make pets of your feathered or hairy food sources as it did I and my siblings. We refused to eat a butchered cow that we had adopted it as pet, when a newborn. I also more now than ever identify with the difficulty of killing a living creature in spite of our human needs.

I will never forget when I was easily shooting squirrel after squirrel that were chewing the wood on our house on the acreage, when a most beautiful specimen with a bright, red, shiny coat appeared in the tree in front of the house. I must have shot at it 4-5 times at fairy close range before hitting it. It just sat there, not moving and I had the darnest time, somewhere deep down feeling that I shouldn't kill this beautiful thing. I'm convinced that that creature was there to teach me a lesson. I couldn't eat meat for some time after, as I saw that squirrel sitting in my plate. I shot no more after that. Some time later, with a terrific storm brewing, I could hear a nest full of baby squirrels squealing with fear. I believe I may have taken their mother.

Why am I sharing this? Maybe because, while it's true we are carnivores I feel we also tend to rely too much on animal flesh for our substinance when there are many very healthy alternatives. In my opinion. it's a matter of balance.

One thing that I wanted to add, and forgot to in the brain-dump that it was (I'm sure several things will come up yet), is the terrible irony of how removed Westerners are from their food while SO many peoples and cultures are (thankfully) still so in touch with it: my own discoveries are laughable.

And that it astounds me how well the kids are taking it. No hesitation to eat the chicken tonight, asking, "Is that the rooster you killed?" "I see feathers!" "This meat is STRONG!" We haven't let them witness any of the killings yet, though they've seen plucking and drops of blood and wandered by during evisceration. I do think that I am, again, over-thinking it and it would be a good thing for them to see, to understand.

Yes, yes, a thousand times yes! And let us never forget than for ANYTHING to live, something else has to die. Even if you only eat plants, you are responsible for animal death. There is no opt-out. Brilliantly expressed. I will be there for moose season. ;)
